When the temps start to rise, the only thing on my mind is firing up the grill. Grilled shrimp kebabs, juicy burgers, pizza, bbq chicken, peaches, asparagus, you name it! Any chance to use the grill instead of the oven on a hot day is a huge plus for me.

I’ve been grilling ‘everything’ lately so I thought I’d mix it up a little with this recipe.

Grilled Shrimp Kebabs

Ingredients:

1 lb precooked medium or large shrimp


3 cups fresh pineapple, cut into large chunks

1 red onion, cut into large chunks

2 cloves garlic, miced

1 cup teriyaki glaze

Salt and Pepper

Directions:

First, thread the shrimp, pineapple, and red onion onto skewers and sprinkle both sides with salt and pepper. Next, add the minced garlic to the teriyaki glaze for an extra punch of garlic flavor. Spray the skewers with oil. Grill the skewers on a preheated, HOT grill for two minutes and then flip them over. Brush glaze over the grilled side. Finally, repeat with the other side. Serve alone, over rice, or quinoa.

Optional:

*You could finish the kebabs with a drizzle of lime juice as the skewers come off of the grill.

*Bell peppers, mushrooms, potatoes, and tomatoes are also delicious variations you could add to the skewers.

I also added some grilled asparagus on the side. Yum! Yes, the shrimp are pre-cooked but something about raw shrimp rubbin’ all up on my pineapple is just not appetizing to me.  Since they’re already cooked, the time on the grill was just enough to give it that great grilled flavor. Oh, these were soooo good! The sweet, grilled pineapple and red onion together is just perfect.
