Luscious Lemon Bars

Every so often I get a craving for lemon bars.  I didn’t have a recipe that I just loved so I’m always trying new cookbooks and websites for the perfect one.  Ones in the past have been too sour, too bitter, too sweet, or just not enough lemon.  I recently tried the ‘Luscious Lemon Bars’ recipe from BHG cookbook (you know, the one with the red and white plaid pattern).  It turned out EXACTLY how I imagine the perfect lemon bar.  Loads of lemon flavor, shortbread crust, not bitter, and perfectly sweet. 

Luscious Lemon Bars
BHG Cookbook

2 C Flour
1/2 C Powdered Sugar, sifted
2 T Cornstarch
1/4 tsp Salt
3/4 C Butter
 4 Eggs, slightly beaten
1 1/2 C Sugar
3 T Flour
1 tsp Lemon Peel, finely shredded
3/4 C Lemon Juice
1/4 C Half&Half or milk
Powdered Sugar

1.  In a large bowl combine first 4 ingredients and use a pastry cutter to cut in butter until mixture resemble coarse crumbs.  Press mixture into greased 13x9x2″ baking pan.  Bake in a 350F oven for 18-20 min.


2.  For the filling, in a medium bowl stir together the eggs, sugar, 3 T of flour, lemon peel, lemon juice, and milk.  Pour filling over hot crust.

3.  Bake for 15-20 min more or until center is set.  Cool on a wire rack.  Sift powdered sugar over top.  Cut into bars.  Cover and store in the refrigerator. 

Yep, they totally filled my craving for lemon bars!  Just look how yummy…and oh so pretty on my flower plates I found last week in my closet.  They were still in the original boxes from quite a few years ago.  So glad I found them.

    Oh Natasha!!! Be warned – they're very addicting! Also, make sure to refrigerate the bars before serving. The flavor is much better after it is chilled. Enjoy!

    These look wonderful! We love lemon bars around here- even the boxed ones. (shhhhh…don't tell) I followed a link from Adriel @ Faith, Family, Food & Fun to your Super Chewy Donuts- those look good too! I'm a new follower to your delightful blog! (My kids just moved to Texas- I hope they miss those crab cakes enough to move back to VA!)
