Panko Parmesan Tomatoes broiled to a crispy finish are bursting with flavor and crunch. You only need a few ingredients to put together this party-perfect appetizer. They’re fresh, crunchy, cheesy, and delicious. But the best part is how easy they are to prepare.

Tomatoes are one of my favorite foods. I even grow several heirloom varieties and save their seeds each year. I’m obsessed! Each summer, I end up with loads and loads of bright red beauties. My bushels of tomatoes mostly find their way onto a fresh BLT or in a huge pot of pasta sauce. Occasionally I’ll find new ways to prepare them. Panko parmesan tomatoes are one of my favorite ways to prepare fresh tomatoes.

Panko Parmesan Tomatoes

Ingredients

4 Medium Sized Tomatoes (Like Campari or Roma varieties)
1/2 cup Panko Bread Crumbs
1/2 cup Grated Parmesan Cheese
1 tsp Dried Parsley
Salt and Pepper

Directions

Slice the tomatoes in half and place them on a greased or parchment paper lined baking pan.

Next, sprinkle the parmesan cheese evenly over the sliced tomatoes.

Follow with a sprinkling of the panko bread crumbs.

Finally, top with the dried parsley, salt, and pepper. If you’re a fan of garlic, that’s another tasty way to top these tomatoes.

Broil the tomatoes on the low broil setting until the cheese starts to melt and the panko bread crumbs begin to brown. It should only take a few minutes. Make sure to keep an eye on them because they will brown very quickly.

Use a toaster oven under the broiler setting if you’re only making a few.

Appetizer or Meal

Panko Parmesan Tomato Appetizers are perfect for a light summer meal when you only need to heat your oven for a few minutes. I’m usually game for anything with tomatoes and cheese so I make these often. Along with a baked potato, they can be a light and delicious dinner.
