Banana bread is one of my simple pleasures.  Warm, right out of the oven, and melting butter is my favorite way to eat it.  It’s also a nice and easy way to use up over ripened bananas sitting on my counter.  Weight Watcher’s ‘Simply Delicious’ cookbook has been on my shelf for going on five years.  It’s a fantastic cookbook filled with tasty, satisfying recipes.  
I just now realized there is a very yummy banana bread recipe inside.  It’s made with wheat germ so I had to give it a try.

For those of you who count points, it’s only 2 points per serving.  (and so very satisfying!)
 

Banana Bread

2/3 C Sugar
1/3 C Butter, softened
2 Eggs
2 Ripe Bananas, mashed (about 1 C)
1/2 C ff Buttermilk


3/4 tsp Vanilla Extract
1 1/2 C Flour  (it calles for AP flour.  I used W. Wheat and it turned out great)
3/4 C Wheat Germ
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Cinnamon  (however, I added a LOT more)
1/2 tsp Salt
 
1.  Preheat oven to 350.  Spray a 5X9 loaf pan with nonstick spray.
 
2.  Beat sugar and butter until creamy.  Add remaining wet ingredients.
 
3.  Combine all dry ingredients and add to the wet ingredients.  Stir just until blended.
 
4.  Pour batter into pan.  Bake 45-55 min.  Cool in the pan on a rack 10 min.  Remove from the pan and cool completely on the rack.
 
If you can’t wait any longer for that ridiculously long cooling process, just cut a slice and and eat it warm with some butter.
(which now makes this 455 points per serving)

Ok, so ONE more thing – powdered sugar. 
Now, it’s perfect!
 
Funny how the WW cookbook mentions nothing
about adding sugar and butter before it is served.

  1. Oh yum!! Thanks for adding the points too, I'm going to pretend like that is what it is even with the butter and sugar. ;o) I may use all m daily points and eat the whole loaf, but whatever-it's supposed to be a flexible program!!

  4. Okay, I'm back again, and yes, this recipe has grabbed me for a second time. I happen to have some bananas on-the-verge on my counter and some wheat germ in the pantry. My 5-year-old is itchin' for something to bake, so here we go! Thanks again!
