Summer Snacks by the pool need to be refreshing and delicious. Bonus points if it’s easy enough for the kids to pop in and help assemble. Here are a few of our favorite summer snacks we devour every time the sun pops out.
Jolly Rancher Lollipops
We love these! Jolly Rancher lollipops have become a yearly, last day of school tradition.
My kids especially love them because they can select their favorite flavor combination before I put the pan in the oven. So simple, so tasty, and only requires a few minutes in the oven.
Line your pan with parchment paper or a silicone baking mat. Do not, I repeat, DO NOT use wax paper! Next, unwrap 18 Jolly Rancher candies and place them on the paper in groups of three. Make sure to leave room for the popsicle stick.
Place the candies in an oven preheated to 250 for 7 minutes. As soon as the candies are melted, quickly press the popsicle sticks into the bottom half. They cool quickly so make sure you have the popsicle sticks ready to go as soon as the candies come out of the oven.
Let cool 20 minutes. Enjoy!
Watermelon Pizza
Summer snacks don’t just have to be a bag of pretzels by the pool. So many delicious fruits are meant to be devoured all summer long. I like to pile them all together into one, big, delicious treat.
To make this fruity treat, just slice a large round from a watermelon and then slice into quarters. Next, cover with your favorite yogurt. I like to add a drop of orange essential oil for an extra kick of flavor. Finally, top with all of your favorite toppings. You could use fresh fruit, toasted coconut, granola, chia, whatever you like.
Peppermint Lemons
A Maryland Fair summer favorite! It’s a simple, refreshing combo of tart lemon and sweet peppermint. Simply insert the peppermint stick into the center of a cut lemon and use the peppermint as a “straw.”
Jiggly Oranges
Enjoy jiggly oranges anywhere. They travel in their own container. Cut citrus fruits in half, remove the fruit inside, and fill with your favorite gelatin recipe (I like to make my own with unflavored gelatin and fruit juice). Chill and slice.
Start with your choice of citrus or watermelon. If using a watermelon, trim the bottom to make it stand flat without tipping over. Next, remove all of the fruit inside the peel or rind. You can use the fruit later for a smoothie!
Sprinkle gelatin over one cup of cold juice. I like orange and cranberry grape juice.
Let the gelatin sit and absorb the juice for several minutes.
Next, add three cups of hot juice that has been brought to boiling. Stir until smooth and let the mixture cool slightly. Add desired edible essential oils. I prefer all of the citrus oils, including bergamot! Then, pour into the prepared fruits and chill in the refrigerator for two hours or overnight. Slice and enjoy!

4 T unflavored gelatin
4 cups of juice, divided
4 oranges, slice and hollowed
2 drops edible essential oil
