Meatballs are a a perfect comfort food to enjoy together. They’re easy to prepare and offer a down-home experience that’s delicious and filling. I like the convenience of having meatballs on hand for quick dinners with sauce and pasta. Sometimes, I like to get a little more fancy on the weekends when I have a little more time. Because they’re so versatile, they can be served alone or dressed to up become a gourmet Meatball Marsala dinner for my family.

Favorite Family Meals
I cook often for my family. The kitchen is where I end up spending most of my time (meal planning, list writing, prepping, cooking, cleaning, storing, etc). Over the years, I’ve created a fantastic meal plan that is one of my most coveted creations. It’s been tweaked dozens of times and now runs like a well-oiled machine. Because of so much trial and error with dinners, it’s now a list of our most favorite meals.

My Experience in Food Lion
Can we talk about the treat that is CUSTOMER SERVICE? It’s hard to find a store nowadays where you walk in and still feel like a valued customer. I feel valued when I walk into Food Lion. First, the employees smile and make eye contact. They don’t seem too swamped with tasks to look up and greet me every time I walk through the door. The carts are clean and the mini carts are extra handy when I only need a few items. Although, I always end up grabbing WAY more and packing it to the gills. Ha! Don’t judge.
I have intentions for just grabbing dinner staples and always wind up checking out their extensive (and I mean extensive) frozen treats section too. The shelves are clean and everything smells fresh. I found the meatballs in a nice, cold case and was also greeted by an employee who asked if he could help.
On my way through checkout, I noticed their new bags. They’re color coded for cold and pantry items. Genius! Always a great experience in Food Lion. Hopefully they always keep their customer service model. It’s so refreshing!

Meatball Marsala Recipe
Servings: 4-6

Ingredients:
1 pkg Carando Italian Meatballs (get your coupon here) Search: “Carando”
3 T butter
8 oz mushrooms, sliced
2 T flour
1 C Marsala wine
1 1/2 C low sodium chicken broth
1/2 C parsley, chopped
salt & pepper
16 oz pasta
Directions:
First, bring water to a boil and prepare pasta according to package instructions. Then set aside.
Over medium heat, melt butter in a large skillet and add meatballs.
Cook, turning occasionally to brown the meatballs on each side for 1-2 minutes until cooked through. Remove meatballs to a plate and set aside.
Next, add sliced mushrooms to the remaining hot butter in the skillet and saute for 8-10 minutes, until soft. Then, season with salt and pepper.
Pour about one tablespoon of the marsala wine into the pan to loosen the bits cooked into the pan. Sprinkle flour evenly over the mushrooms and stir to coat.
Slowly pour in the rest of the marsala wine and the broth. The flour will be clumpy at first. Patiently stir to remove any clumps and then bring to a boil to thicken. Reduce heat to medium and add meatballs into the thickened sauce and mushrooms. Stir to coat meatballs and let simmer for 5-10 min over low heat.
Finally, spoon meatballs and sauce over pasta, sprinkle with parsley and serve immediately. This recipe can be doubled and frozen.
