Here’s how I ended up making bacon corn chowder:
Bacon Corn Chowder
4 slices Bacon, browned and crumbled
1 Onion, minced
4 ears of Corn, shucked
2 large Potatoes, diced
3 stalks of Celery, thinly sliced
6 cups of Vegetable or Chicken Broth
1/2 tsp Cumin
1/4 tsp Black Pepper
1 cup of Cream
1 Tomato, diced
Saute the onion in the bacon drippings for a few minutes in a large pot. Add corn, potatoes, celery, broth, cumin, and pepper. Bring to a boil for about 10 minutes. Transfer half of the ingredients to the blender. Puree and then return mixture to the pot. Let it simmer for about 30 minutes, covered. Stir in cream. Serve topped with diced tomato and crumbled bacon. Enjoy!
