Dinner

Feta, Spinach, and Sun-Dried Tomato Stuffed Chicken

Dinner last night was delicious!  I have sun-dried tomatoes in oil in the fridge and decided to use them in a chicken dish.  Very tasty!
First, marinate chicken breasts in lemon juice, oil, vinegar, and Mrs Dash (love that Mrs D).
Next, mix together an entire package of feta cheese, about 10 oz of frozen chopped spinach, a diced clove of garlic, about 2 tablespoons of diced sun-dried tomatoes, and about 2 tablespoons of the oil from the the tomatoes. 


Mix it all together and set aside.
Filet open the chicken breasts and layer the feta mixture inside.  Bake at 375 for about 40 minutes or until the chicken is thoroughly cooked.  Ooooo, it’s so creamy and tangy with just a hint of garlic.  We had this last night with some quinoa and steamed veggies.  This is the first time I’ve made this dish and I’ll definitely be making it again. 
It’s DELICIOUS!

    I just made something similar, but without the sun-dried tomatoes. Mmm! That sounds like a good addition. I'm totally doing that next time. ๐Ÿ™‚
