My mom loved strawberries.  I can remember a fresh bowl of berries being a staple on the counter next to the sink all summer long.  Her favorite was to slice them, sprinkle with sugar, and let them sit a while to make their own syrup.  Yum! 
Oh how things changed when we found out how easy it is to make our own chocolate-dipped strawberries.  That was a few decades ago but I am still in LOVE with this very simple treat.
So, I decided to turn this into a cupcake.
-somehow-
I started with a basic recipe for vanilla cupcakes.
Then, I added 
a CUP of diced strawberries
and
a CUP of mini chocolate chips
The raw batter would have been enough of a treat right there but I’m just not in the mood for food poisoning so I went ahead and baked them into regular and mini sized cupcakes. 
Although they’re perfect just like this,
I wanted to add some intense strawberry flavor
So, I did what I had to do…
I poked holes in the top…
To fill them with this VERY tasty strawberry puree:
Yes! 
I poured it over the cupcakes and let it soak in
just like a rum cake.
For the minis, I piped the puree inside.
But wait! 
There’s still the frosting. 
I was on a hunt for a
dark chocolate frosting
recipe that makes the final result very shiny,
smooth, and full of chocolate. 
This is on Martha Stewart’s website
and it is exactly what I wanted. 
It looks just like chocolate I would use for
dipping berries.
It’s made with a LOT of semi-sweet chocolate
It’s not quite ready.  One more thing –
Now she’s done. 
Oh my, this turned out soooo good! 
When you bite down into the center,
you get a bite of strawberry soaked cake
and smooth chocolate. 
A perfect match. 

Cake Recipe:
Martha’s Vanilla Cupcakes
!!!Don’t forget to fold in diced strawberries and mini chocolate chips at the end!!!

Strawberry Puree Recipe:
3/4 lb strawberries
1/3 C sugar
1-2 tsp lemon juice

Place all ingredients in the blender or food processor and puree until smooth.  Leftover puree can be used for pancakes, milkshakes, ice cream, or strawberry milk.

  1. I am on a diet and those desserts are really tempting me to eat some of that in the weekend. My husband should stop me from eating those but I probably punch him if he stops me. Lol. I should try the cupcake with the strawberry on the top. Those are truly indulging. Thanks for sharing.

  4. Wicked, wicked wicked cupcakes, these should have been called. Love the idea of everything, I love fresh strawberries baked in, but then you added chocolate, then soaking it then the frosting and then topping it. You are such a BAD girl, I LOVE it.
